i'm doing my yearly cleansing routine right now, i learned from last year and decided to wait until "spring" this year.  i've been doing just juice for the past three days.  today was really exciting.  i made veggie broth.

It's officially here!  Summer in Colorado - there is no where in the world I'd rather be. 
 This summer is going to be all about:

enjoying the new house
working on the farm
playing in the garden
teaching yoga
trying new recipes with all our fresh veggies
trips to the mountains
morning hikes before work
picnic dates
starting new chapters
making friends
visiting the ranch
supporting the neighborhood brewery
dinners with family
outdoor concerts

i used to hate cauliflower.  then i discovered roasting it and now i eat it about twice a week.  
cut the florets
coat them with olive oil, salt and pepper
roast at 400 degrees mixing occasionally for about 30 - 40 minutes
eat as desired!

great in salads, mixed with chickpeas and parsley, dipped in aoili, snuck into burritos, the list goes on...

radical health challenge:  instead of carb-loading with refined wheat, or rice, or some pre-game sports mix; before your next workout eat some raw veggies instead.

raw red cabbage offers cardiovascular support, digestive track support, it's anti-inflammatory, it's chock full of anti-oxidants and it's a cancer preventative.  just add some olive oil, some apple cider vinegar, some salt and pepper and it's also delicious..... oh yeah, and it's pretty.

i love me a wrap.  they are easy.  they are light.  they roll up.  this one has a bit of a mediterranean vibe.  for the recipe.... 

blend:
 2 spoonfuls of dijon mustard
2 spoonfuls of balsamic vinegar
4 spoonfuls of olive oil
1 clove garlic (minced finely or food-process everything)
couple shakes of cumin,
salt and pepper to taste

shake:
in a freezer bag with chopped eggplant (and bellpeppers and onions if you'd like)

roast: 
for about 20 minutes (or until they are soft) at 425.  use a metal baking sheet. glass makes them soggy.

spread:
some fucking hummus on a tortilla or wrap.

add:
chopped red onions
tomatoes (sun-dried or regular)
kalmata olives
spinach
roasted eggplant

drizzle:
with olive oil and balsamic if that's your thing.

eat!
